ISCO is a contemporary bakery in Alvalade and part of the Paradigma Group - one of the projects that helped shape Lisbon's sourdough movement. Since 2018, our work has been defined by a deep commitment to product quality: organic flours, 100% artisanal methods and slow natural fermentation as the foundation of everything we bake. Each loaf reflects time, technique and respect for the ingredients - a conscious and transparent approach to baking, where flavour, texture and authenticity always come first.
Role Description
After consolidating in Alvalade, we're preparing to expand into new locations and we're looking for someone to lead this next phase. We're looking for a Head Baker to oversee the entire bakery operation, develop new products, ensure consistency and quality, train teams, and support ISCO's growth.
We're looking for someone with:
* Solid experience in sourdough / natural fermentation baking
* Ability to lead, train and motivate teams
* Passion for product and strong attention to detail
* Organisation, operational vision and autonomy
* Willingness to grow with us and be part of the brand's evolution
You will be responsible for:
* Coordinating all bakery production at ISCO
* Developing recipes and new references
* Ensuring quality, consistency and daily execution
* Organising and structuring processes
* Supporting the opening of new locations and the replication of the operation
* Working closely with the creative and operational leadership of the central team
