Restaurant & Bar Manager
to lead our dynamic team and elevate our dining experience to the next level.
Mission
Ensure full management of Restaurant & Bar operations, delivering high service standards, profitability and alignment with Hyatt brand standards. Lead teams with a focus on guest experience, operational efficiency and continuous development, contributing to the hotel's positioning as a reference in F&B within the local market.
Responsibilities
Oversee daily restaurant and bar operations, ensuring flow, organization and compliance with standards.
Ensure service excellence, with focus on quality, detail and consistency.
Monitor service levels and act proactively on deviations.
Lead, motivate and develop the team, fostering a high-performance environment.
Ensure continuous training aligned with brand standards and business goals.
Manage schedules, rosters and operational needs efficiently.
Conduct performance reviews and individual development plans.
Ensure budget compliance (revenue, payroll and operating costs).
Monitor key indicators (revenue, covers, average check, productivity).
Control costs (F&B cost, waste, extras) to ensure profitability.
Identify revenue opportunities (upselling, cross-selling, new experiences).
Ensure a personalized service aligned with brand positioning.
Monitor guest feedback and implement improvement actions.
Maintain a visible presence on the floor, engaging with guests.
Ensure compliance with hygiene and food safety standards (HACCP).
Ensure alignment with internal policies, audits and Hyatt standards.
Implement and maintain effective operational procedures.
Contribute to the definition of menus, beverage lists and concepts aligned with positioning.
Work closely with kitchen and bar teams to improve the offer.
Monitor market trends and adjust the offer to guest expectations.
Participate in F&B strategy and action plans.
Support commercial initiatives and events that drive revenue.
Analyze performance and propose improvements.
What we're looking for:
Previous experience in a similar leadership role, preferably in luxury hotels or upscale restaurants.
Strong leadership and team management skills.
A hands-on approach and passion for delivering outstanding service.
Excellent communication skills in English and Portuguese.
Knowledge of restaurant financials and operational controls.
