Senior pizza operations manager

Job Summary

We are seeking a highly skilled Pizzaiolo (Pizza Chef) to lead our pizza operations and help shape the creative and operational direction of our new pizzeria.

* The ideal candidate will have deep knowledge of traditional Italian pizza-making techniques, thrive in an open-kitchen environment, and consistently deliver high-quality products aligned with authentic Italian standards.


Key Responsibilities

* Prepare and manage pizza dough, ideally using long-fermentation methods such as poolish or sourdough, ensuring optimal texture, flavor, and digestibility.
* Stretch, top, and bake pizzas following signature recipes and product standards.
* Operate and maintain professional pizza ovens (electric, wood-fired, or stone deck) safely and efficiently.
* Manage daily dough production, fermentation schedules, and overall quality control.
* Support menu development by testing and refining toppings and seasonal variations aligned with Italian culinary principles.
* Oversee mise-en-place, ingredient preparation, and workstation organization.
* Ensure strict adherence to hygiene, HACCP, and Portuguese food safety regulations.
* Collaborate with the kitchen team to maintain smooth service flow during peak demand.
* Plan and execute production schedules for daily operations and special orders.
* Maintain consistency in portioning, presentation, and product quality.
* Train junior staff in dough handling, pizza production, and oven management.
* Contribute to menu strategy, product launches, and special event offerings.
* Uphold high standards of cleanliness, discipline, and craftsmanship across the operation.


Candidate Profile and Requirements

* Proven experience as a Pizzaiolo or Pizza Chef in an Italian-style pizzeria, café, or restaurant.
* Expertise in traditional Italian pizza styles, such as Neapolitan or Roman.
* Strong understanding of dough fermentation, hydration ratios, temperature control, and baking dynamics.
* Ability to work efficiently under pressure without compromising quality.
* Solid knowledge of HACCP and industry food safety standards.
* Strong teamwork, communication, and organizational skills.
* Leadership abilities to oversee production and mentor staff.
* Culinary training is an advantage but not mandatory.
* Fluency in English required; Portuguese or Italian is a plus.
* Passion for Italian gastronomy and artisanal craftsmanship.
