Casa de Sada, Curio Collection by Hilton is set beside the ocean in the historic fishing village of Armação de Pêra, bringing together the natural rhythm of the coast with the warmth of Portuguese hospitality.
As we prepare for the opening of this exciting new luxury destination, Casa de Sada is seeking an experienced, passionate and guest-focused Head of Bars to lead and elevate our bar operations across the property.
This is a unique pre-opening opportunity to shape the hotel’s beverage identity, establish exceptional service standards and build a high-performing team from the ground up.
You will play a key role in creating exceptional and memorable beverage experiences within our five-star environment.
The Role
You will oversee all bar operations, ensuring the highest standards of service, creativity, operational excellence and guest satisfaction.
You will:
• Lead the pre-opening setup of all bar operations across the property
• Develop beverage concepts, menus and operational standards
• Recruit, train and develop bar teams
• Curate and enhance beverage menus, including cocktails, wines, premium spirits and non-alcoholic offerings
• Ensure exceptional guest experiences through outstanding service and innovation
• Monitor performance, quality standards and guest satisfaction
• Drive operational efficiency, cost control and profitability
• Ensure compliance with Hilton brand standards and licensing regulations
• Collaborate closely with the Food & Beverage team to deliver memorable guest experiences
• Ensure a seamless transition from pre-opening to full operations
About You
• Proven experience in a senior bar leadership role within a luxury hotel, resort or high-end hospitality environment
• Strong knowledge of mixology, premium beverages and emerging industry trends
• Excellent leadership and people management skills
• Strong guest relations and problem-solving abilities
• Commercially minded, with experience in stock control and cost management
• Highly organised with strong attention to detail
• Experience in a hotel pre-opening environment is advantageous
• Fluent in Portuguese and English
